Research expeditions aimed at identification and popularization of the oldest recipes of Kazakh traditional cuisine, description of cooking technology, calculated nutritional biological value of traditional meat, dairy dishes, bakery products, desserts and drinks. Recipes of rare dishes, once widely used and revived anew as a result of exploratory research and field work, are presented.
